Ingredients:

2 Turkey drumsticks

Seasoning:

1 1/2 cups plain flour
1 tbsp rock salt
1 tsp cracked pepper
1 tbsp dried oregano

For browning:

1 oz butter
2 tbsp vegetable oil

The base:

4 pints boiling chicken stock (make fairly weak, 1 stock
cube to 2 pints)
1 onion, skin left on for colour, halved

The vegetables:

4 large carrots, finely diced
4 medium potatoes, finely diced
1 medium buttenut squash, peeled, deseeded & diced

Flavour base:

200g pack smoked bacon lardons
1 onion, thinly sliced
1/2 tsp rock salt
1/2 tsp cracked pepper
1 tsp dried oregano
Directions:
  1. Unpack the turkey drumsticks and give them a quick rinse under a cold tap, pat dry with kitchen paper.

  2. Sift the plain flour into a large shallow dish, add the other 'seasoning' indredients and stir in evenly. Coat the turkey drumsticks in the seasoned flour.

  3. Heat 1 tbsp of the oil and 1/2 oz of butter in a large frying pan, brown the drumsticks for 5 minutes a side until golden.

  4. Add the stock & the halved onion to the slowcooker, turn on to high, add the turkey drumsticks, cover and leave for 2 1/2 hours.

  5. Remove the turkey drumsticks to a bowl, strain the stock & discard the onion. Reserve 1 pint of the stock in a jug and return the rest to the slow cooker, add the 'vegetables' continue to cook on high for 1 hour.

  6. Strip all the meat from the drumsticks & cut in to about 2 cm cubes. Stand to one side.

  7. In the same frying pan that was used to brown the drumstick, fry the bacon and onion together until the onion is softened and slightly coloured, add the salt, pepper & oregano, then pour in the reserved pint of stock, boil rapidly until reduced to 1/4.

  8. After the hour is up, add the turkey & the onion mixture to the slowcooker, stir once then leave for a further 2 1/2 hours.

  9. Serve with homemade bread rolls.
