Easy, healthy, cheap and veggie! It would cook just as well in the oven if you have no slow cooker

Ingredients:

400g mixed pulses (about 40p I think)
400g can value chopped tomatoes (21p)
Large onion (10p)
Selection of veg: I used 2 courgettes, a pepper, a few
mushrooms, 2 large carrots(pepper and courgettes free from
garden - maybe 50p for other veg)
Clove of garlic or some garlic salt
Pinch mixed herbs
Veg stock cube
Salt and pepper to taste  

Directions:
  1. This served 5 people, but you could add more veg to stretch it, or another can of tomatoes.

  2. Rough costing £1.30 plus cost of rice - 50P?. £1.80

  3. Chop up all the veg and chuck in the slow cooker. Add the pulses, tomatoes and seasonings. If it looks like it needs more liquid, add a little stock or plain water. Cook on medium for 6 hours or so, then serve with some rice and a little bit of grated cheddar on top.
