Ingredients:
Serves 6-8
2 tbsp oil
2 large onions
2 cloves garlic
8 large tomatoes
8oz mushrooms
4 med carrots
half pint white wine or cider (any old cheap stuff will do)
Seasoning
4 tbsp chopped parsley
10 oz spaghetti
8 oz grated cheese
Directions:
Heat the oil and fry the chopped onions and garlic for 5 mins. Add the chopped tomatoes and mushrooms and cook for 5 minutes, then add the grated carrots and wine or cider. Season to taste and simmer for 10 minutes. Then add the parsley.
Meanwhile, cook the spaghetti and grate the cheese. Mix the spaghetti with the vegetables and stir in the cheese. Serve at once, maybe with a green salad.
