A delicious & filling chilli that is wonderful served with plain boiled white rice & home made pitta breads.

Ingredients:

olive oil
garlic puree
2 onions, finely sliced
2 red peppers, finely diced
800g minced beef
2x 400g cans chopped tomatoes
1/2x 170g pack Paxo stuffing mix, made up with boiling
water
2 beef oxos
1 can kidney beans
3-4 tsp mild chilli powder (depending on taste)
a little water if needed
Directions:
  1. Heat a little oil in a large pan, add the garlic puree, then fry the onions and peppers until softened.

  2. Add the minced beef, break up and brown.

  3. Add the tomatoes, made up stuffing, oxos & kidney beans. Mix well.

  4. Add the chilli powder a little at a time, tasting as you go as not to make it too hot.

  5. Mix well and let bubble for 20-30 minutes, adding a little more water if necessary.

  6. Serve
