Ingredients:

2lb pork chipolata sausages
2lb potatoes
salt
4tbsp milk
6oz butter
2 medium onions, finely chopped
2tbsp plain flour
4 garlic cloves, crushed (optional)
8oz mushrooms, chopped
2 x 150g/5oz cans baked beans
1 tsp chilli seasoning or very mild chilli powder
pinch of ground coriander (optional)
1/2 pint chicken stock
Directions:
  1. Heat the oven to 180C/350F/Gas 4. Put the sausages in an ovenproof dish and bake them for 40 minutes. Turn the sausages halfway through the cooking time.

  2. Meanwhile, boil the potatoes in salted water for about 20 minutes until tender. Drain and mash with the milk and 2oz of the butter. Drain the sausages on absorbent paper and cut each into 3 pieces.

  3. Melt 2oz of the butter in a saucepan and cook the onions over a moderate heat for 2 minutes. Stir in the flour and cook for 1 minute. Add the garlic, if using, together with the mushrooms and cook for a further 2-3 minutes or until the onions are softened.

  4. Stir in the baked beans, chilli and coriander if using. Add salt to taste.

  5. Stir in the stock and bring to the boil, stirring constantly.

  6. Add sausages to sauce and pour into a large, deep ovenprrof dish. Top with mashed potatoe. Spread the potatoe evenly over the sausage mixture and with a fork make a pattern on the topping.

  7. Dot with the remaining butter and bake for 30 minutes until heated through and golden brown on top. Serve hot.
