Description:
This is a really gorgeous alternative to lasagne. Though, not for the weight conscious.
Serve with salad and warm crusty bread rolls.

Ingredients:

1 lb 8oz minced beef
8 oz spaghetti, broken into short lengths
2 oz beef dripping or 2 tbsp veg oil
4 medium onions, chopped
2 cans chopped tomatoes
1 tbsp dried mixed herbs
salt and pepper
2 tbsp veg oil
2 oz butter
4 tbsp grated parmesan

SAUCE
2 eggs, beanten
2 oz plain flour
1 pint milk
4 oz cheddar cheese, grated

TOPPING
2 oz dried breadcrumbs
4 oz cheddar cheese, grated
2 oz butter
Directions:
  1. Melt the dripping or heat the oil in a large pan, add the onions and fry gently until soft. Add the minced beef and fry over moderate heat until well browned, stirring constantly to break up lumps. Stir in the tomatoes, herbs and salt and pepper to taste and continue cooking for a further 10-15 minutes.

  2. Meanwhile, bring pan of salted water to the boil, stir in the oil, the add the spaghetti. Cook at a rolling boil for 10-12 minutes until the spaghetti is just tender. Drain thoroughly.

  3. Heat oven to 190C/375F/Gas5.

  4. Melt the butter in the rinsed out spaghetti pan, add the spaghetti and parmesan cheese and toss well to mix over a gentle heat.

  5. Put half of the spaghetti in the bottom of a deep oven proof casserole dish and spread even. Spread the meat mix over the spaghetti evenly then add the remaining spaghetti. So you have a layered effect.

  6. Make the sauce: mix the eggs and flour in a saucepan, then gradually whisk in milk and stir in cheese.

  7. Place pan over gentle heat and heat through for about 5 minutes until thickened, whisking constantly and vigourously all the time to prevent lumps. Add salt and pepper to taste, then pour over the spaghetti.

  8. Mix the dry topping ingredients together and sprinkle over the top of the sauce. Dot with butter. Bake for 20-30 minutes until golden brown. Serve hot.
