Description: This recipe uses 'easy bolognese' to make a substantial lasagne that goes down extremely well with a salad and some sliced & buttered french baguette.

1 quantity 'easy bolognese'
10 sheets lasagne 'verdi' (green)
10 sheets normal lasagne (white)
2 oz butter
2 oz plain flour
1 pint semi-skimmed milk
salt & pepper
1 ball of fresh mozzarella, finely diced or grated.
Directions:
In a large rectangular oven proof dish, layer the bolognese sauce with the lasagne sheets, alternating between the green and white sheets to add interest. Finish with a layer of lasagne.
Make the sauce: Slowly melt the butter in a saucepan, stir in the flour to make a 'roux', cook for 1-2 minutes.
Slowly add the milk, a little at a time. Bring to the boil and simmer for 10 minutes, stirring constantly until thickened. Season with salt and pepper.
Top the layered dish with the white sauce, skatter on the diced mozzarella & bake at 180C for 30-40 minutes until golden and bubbling.
