A rich and chunky tomatoe sauce that is ideal over meatballs with spaghetti or just used stirred in to pasta and skattered with parmesan.

Ingredients:

olive oil
1 tbsp garlic puree
2 large onions, finely sliced
2 red peppers, finely diced
3-4 medium courgettes, diced
1 medium aubergine, diced
2 x 400g can chopped tomatoes
1 x 500g carton sieved tomatoe passata
1 tbsp italian herb seasoning
salt & pepper
1/4 pint milk
Directions:
  1. Heat the oil and garlic puree in a large pan, add the onions, peppers, courgettes & aubergine, cook until softened.

  2. Add the tomatoes and the passata, stir in the herbs and season well. Simmer for 15 minutes.

  3. Reduce the heat, stir in the milk and let gently simmer for a further 5-10 minutes.

  4. Use as required.
