Description:
A tasty pork sauce made with leeks and tomatoes is topped with a crunchy cheese and oat crumble. Serve with carrots and green beans for a family saturday lunch.

Serves 4 but easily doubled.

Ingredients:

For the meat sauce :

2 tbsp vegetable oil
3 medium leeks, chopped finely
1 1/2 lb lean minced pork
400g can chopped tomatoes
4 tbsp tomatoe puree
salt & pepper

For the crumble:

6oz plain flour, sifted
4oz butter, cut in to pieces
2oz rolled oats
4oz strong cheddar cheese, grated
Directions:
  1. To make the meat sauce: heat the oil in a large pan; saute the leeks for 4-5 minutes. Add the minced pork and cook until browned. Stir in the remaining sauce ingredients and cook for 10-15 minutes, until the mixture is almost dry.

  2. To make the crumble: place the flour in a bowl, add the butter and rub in until mixture resembles fine breadcrumbs (or use a food processor). Stir in the oats and cheese, mix and season well.

  3. Place the meat mixture in to an ovenproof dish and spread evenly, then sprinkle the crumble mixture over the top.

  4. Cook at Gas Mark 6 / 200C for 20-30 minutes.
